Free Healthy Recipe - Fatoush

A variation on tabouli, fatoush is a Middle Eastern dish that complements fish particularly well. The capers, rocket and sesame seeds give it quite an unusual flavour. Traditional fatoush has flatbread broken through it, but this version is a marvellous alternative for anyone who is wheat intolerant or is trying to lose weight. I promised my yoga teacher, Nicole, who gave me this recipe, that I would mention that her mother and sister invented it.

Ingredients
1 tbsp sesame seeds
1 large bunch flat-leaf parsley
½ bunch mint
3 tbsp capers
2 lemons juiced
pinch sea salt
Method

Dry-roast the sesame seeds in a pan until they turn slightly golden. Set aside to cool.

Wash and dry the parsley, mint and rocket.
Using a sharp knife, chop the herbs finely (a blunt knife will bruise the leaves), then finely chop the spring onions, tomatoes and cucumbers.
Rinse the capers and chop finely.
Mix with the herbs and vegetables, pour over the lemon juice and sprinkle with the sea salt and sesame seeds.

If you are serving this salad with fish, put the fish on a platter with the fatoush around it and sprinkle some kumara chips (see recipe list) on top.
