Free Healthy Recipe - Mixed Seafood and Noodle Salad

Don't be put off by the number of ingredients in this salad. This is a simple throw it all together sort of meal that will look anything but thrown together when you present it to the table. Buy small quantities of selected seafood and mix it yourself - that way you'll spare the "the sausage of the sea" experience - cheap seafood extender, used to bulk up a seafood mix.

Ingredients
180 grams organic somen noodles, (available from supermarkets)
500 grams mixed seafood pieces, (prawns, calamari, fish, octopus)
1 tbsp sesame oil
2 kaffir lime leaves finely sliced
2 red chillies chopped
1 tbsp fish sauce
3 tbsp lime juice
2 cups watercress, washed and trimmed
1 cup coriander leaves, roughly chopped
1 cup mint leaves, roughly chopped
1 Spanish onion finely sliced
1 Lebanese cucumber julienned
Method

Coat the seafood in the sesame oil, chilli and kaffir lime leaves. Combine the lime juice, rice syrup, fish sauce together in a bowl. Boil a pan of lightly salted water and add the noodles. Bring to the boil then reduce the heat and cook for 3 - 4 minutes. Once cooked, drain the noodles and rinse thoroughly under cold water prevent the noodles sticking together.

Heat a wok and add the seafood mix. Stir fry for 5 minutes or until the fish is cooked through. Add the watercress, shallots and stir fry for 1 minute before removing from the heat. In a large bowl, combine the seafood, noodles, coriander, mint, Spanish onion cucumber and dressing and serve.

Note: The ancient Greeks believed watercress could cure a deranged mind. It belongs to the cruciferous family (related to broccoli and cabbage). Cruciferous vegetables re reputed to have anticancer properties.
