Free Healthy Recipe - Celery Pickles

Dairy free, Low carbohydrate, Low fat

Another recipe from Chinese Medicine expert Kim Norton. Sour pickles directly benefit the liver and gallbladder and are a good addition to the spring diet, to cleanse the organs for warmer weather.

Ingredients
3 stalks celery
water to balance
Method

Finely slice celery crosswise and soak in umeboshi vinegar and water.
Let sit for 1 hour.
Serve with your meal or use in sandwiches.
Store in an airtight container in the fridge for up to a few days.

Makes 2 servings (serve = 1/2 jar)
