Brie
Brie is a full-fat soft cheese that originated in Brie in France. It is surface-ripened from the outside in and surrounded by an edible white mould. Brie is ready to eat when soft and oozing on the inside. It has a mellow delicate flavour.

The best brie can be bought from a good deli or specialty cheese store. Avoid the supermarket canned products. Look for one that is plump and firm to touch.
To Store:
Ripen at room temperature. Once ripe, brie has a short shelf-life and should be used within a few days. Store in the refrigerator in the cheese section of the fridge.
Tips & Tricks:
Wrap brie and other cheeses in calico or greaseproof paper in preference to foil or plastic.
